YUM-O!!! *Super Easy Peanut Butter Cookies*

*Super Easy Peanut Butter Cookies*
1 egg
1 cup creamy peanut butter
1 cup sugar
1/2 cup chopped PLANTERS COCKTAIL Peanuts (optional)
1 tsp. vanilla

PREHEAT oven to 350°F. Beat egg in large bowl with electric mixer on medium speed until foamy. Add remaining ingredients; beat until well blended.
SHAPE into 1-inch balls. Place, 2 inches apart, on ungreased baking sheets. Flatten each ball, in criss-cross pattern, with tines of fork.
BAKE 10 min. or until lightly browned. Cool 1 min. Remove from baking sheets to wire racks; cool completely.

Kansas City Trip 2008 - Paradise Park

Kristy and I took the little boys (Jackson, Cole, and Brady) to Paradise Park while the big boys (Smokey and Faron) stayed home and worked...

Another successful trip...they were asleep before we got out of the parking lot.

Kansas City Trip 2008 - Wrestle Mania

Sorry this has taken me so long to get posted, but these are from our trip to Kansas City to see Smokey, Kristy, Jackson and new baby Brady. Jackson and Cole had a blast playing with each other. The wrestling match started soon after we arrived and last all weekend...





I'm still not really sure who won. I guess it's a draw until they meet again...maybe a Christmas rematch.

Politics

I finally got around to watching Sarah Palin and John McCain's speeches from the Republican National Convention last night, and I am VERY impressed with her. She doesn't hold back and she talks politics in a way the normal, everyday person can understand.

YUM-O!!! *Easy Baked Potato Soup*

Jess came to work the other morning with his latest bargain from Sam's. It was the Taste of Home Heartwarming Soups Cookbook. I took one look at the cover and wanted to make the Baked Potato Soup that was pictured there. I made it last night and brought it with me to work today. It's great and very filling, oh, and very easy. Jess gave it a thumbs up too. Here is the recipe for you to enjoy...
Easy Baked Potato Soup
4 to 5 medium baking potatoes, baked
5 bacon strips, diced
2 (10 3/4 oz) cans condensed cream of potato soup, undiluted
1 (10 3/4 oz) can condensed cheddar cheese soup, undiluted
3 1/2 cups milk
2 tsp garlic powder
2 tsp Worcestershire sauce
1/2 tsp onion powder
1/4 tsp pepper
Dash Liquid Smoke, optional
1 cup sour cream
Shredded cheddar cheese
Peel and dice baked potatoes; set aside. In a Dutch oven or soup kettle, cook the bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 1 1/2 tsp drippings.
Add soups, milk, garlic powder, Worcestershire sauce, onion powder, pepper, Liquid Smoke if desired and reserved potatoes to the drippings. Cook, uncovered, for 10 minutes or until heated through, stirring occaisionally. Stir in the sour cream; cook for 1-2 minutes or until heated through (do not boil). Garnish with cheddar cheese and bacon.
Yields: 10 servings (2 1/2 quarts)

My suggestions
I forgot the cheddar cheese soup when I was at the store so I used about 8 oz of Velveeta cheese and a little extra milk.
Add the milk a little at a time, my soup was a little thin.
Be sure and cut the potatoes pretty small. I left mine in about 1 inch cubes and that was too big.
I didn't use the Liquid Smoke.
Next time I'll use more bacon and also add some chives or green onions.

Thrifty Thoughts - Make Your Own Mixes

Some of these mix recipes sound interesting...By the time you buy all the ingredients to make your own Bisquick mix, it might be cheaper to just use the real stuff...I still might give some of these a try sometime...maybe the rice seasoning mix and the vanilla chai tea mix.

1. I LOVE chocolate milk. If I had to pick a beverage to take with me to a deserted island, it would be chocolate milk.

2. I can't stand for my socks to be rolled up. I mean I seriously CAN'T STAND IT. It makes the hair on my neck stand up and sends chills up my spine. (Liz loves to torment me by rolling up Cole's socks whenever she's around him.)

3. The car I had in high school had a name...Winky the Blue Goose.
4. I love football...BOOMER SOONER!!!

5. I love salt...some people have a sweet tooth, I have a salty one.

Life Size
